Raw Energy Balls


 
I am on vacation! It feels good! But I don’t want to forget about you wonderful readers while I am away. Raw Energy Balls: (4 in 1 recipe)

Ingredients: 
Equal part raw nuts/seeds and dried fruit. I typically use 1-2 cup nuts/seeds and 1-2 cup dried fruit which makes about 8-12 raw energy balls.
Honey is optional. I use about 1 tbsp per batch. However, you can use more or less depending on your preference. I find that the honey makes it easier to form the raw energy balls and helps them stick together better.
Directions: 
Place nuts/seeds, dried fruit and honey in a food processor and process until all ingredients are chopped and combined well. Scoop out about 1-2 tbsp of the mixture into your hands and roll into a ball. Then, place the ball onto to a cookie sheet line with parchment paper. Once the cookie sheet is full of the raw energy balls, place them in freezer for about 15 minutes before storing them into an airtight food storage container.
Notes: If you plan on eating the raw energy balls within a week, you can store them in the fridge. Otherwise, they can be stored in the freezer and thawed in the fridge whenever you’re ready to eat them.
Here are 4 raw energy ball mixtures that I made: 
1.      Papaya Duo Seed Blend
1/4 cup raw sunflower seeds (where to find them)
1/4 cup raw pumpkin seeds (where to find them)
1/2 cup raw almonds (where to find them)
1/2 cup dried papaya
1/2 cup Medjool dates, pitted
Optional: 1 tbsp honey (where to find it)
2.   Trio Nut Blend
1/2 cup raw walnuts (where to find them)
1/2 cup raw pecans (where to find them)
1/2 cup raw cashews (where to find them)
3/4 cup dried tart cherries
1/4 cup Medjool dates, pitted
Optional: 1 tbsp honey
3.     Nutty Hemp Blend
1/4 raw hemp seeds (where to find them)
1/2 cup raw brazil nuts (where to find them)
1/4 cup raw almonds (where to find them)
3/4 cup raisins
1/4 Medjool dates, pitted
Optional: 1 tbsp honey (where to find it)
4. Mixed Nut Blend
1/4 cup raw brazil nuts (where to find them)
1/4 cup raw cashews (where to find them)
1/4 cup raw pecans (where to find them)
1/4 cup raw walnuts (where to find them)
1/2 cup dried tart cherries
1/4 cup dried papaya
1/4 cup raisins
Optional: 1 tbsp honey (where to find it)
