Cauliflower Pork Salad

Have you ever had that moment when it’s almost dinner time and you say “crap! What am I going to make?” You look inside your fridge all you see are random ingredients but nothing to put together a meal with? Oh good, I’m glad I’m not the only one!

So when I read the title of this new book, 30 Days of Simple Dinner by Rachel Jones of Nourishing Minimalism, I knew it was for me. It spoke to me.

“Stephanie, you need me. Stop making the same two things you know how to make”

You guys know I am in  nursing school, 4 nights out of the week I’m not home; so on most days I have to leave something ready for the husband and baby, or leave something prepped simple enough that he can finish.

Here is where 30 Days of Simple Dinners comes in. It meets my criteria for acceptable dinners:

  • Easy to prep ahead, or easy enough to cook in little to no time from scratch
  • Easy enough for my husband to make with a toddler attached to his leg
  • Real Food. I want fast and easy, but I don’t want junk.
  • Few ingredients
  • Basic ingredients that I would normally have stocked
  • And delicious!  

So, the recipe. Rachel is graciously letting me share with you a small peek into her delicious and easy recipes.

Cauliflower Pork Salad


  • 1 large head cauliflower, chopped
  • 2 cups pork roast (leftover from a previous recipe, genius!)
  • 1 cup frozen green peas
  • 1 red bell pepper, diced
  • 1/4 onion, diced
  • 1/2 sour cream
  • 1/4 mayonnaise
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt, or to taste


Mix all together, serve chilled. That’s it. How awesome is that?

Rachel has done an marvelous job at knowing Real Food and tasty meals don’t have to be elaborate or complicated with exotic ingredients. A meal can be simple yet flavorful, easy yet healthy, and that’s how all the recipes in this book are.
